Air Fryer Banana Bread with Butter Icing
Banana bread loaded with walnuts and a side of butter icing. It has banana so it has to be healthy.
Air fried banana bread. If you have a huge sweet tooth like me (and love bananas) then be prepared to make this every month! Just make sure you have a baking tin that fits your air fryer.
Choose your tin
Make sure you choose a baking tin that will fit in your air fryer when the basket is fully closed.
A shallow tin is useful so that the batter is spread out and doesn't rise too much that it hits the top of the air fryer!
I'm using this square 15cm (5.9in) loaf pan. This fits into my Philips Compact (4.1L) Air Fryer perfectly. Just make sure not to overfill it!
What do you need?
- Butter - 1/4 cup, salted, room temperature
- Sugar - 1/4 cup, brown
- Banana - 1, mashed
- Egg - 1, beaten
- Flour - 1/2 cup, all purpose
- Cinnamon - 1 tsp
- Baking Soda - 1/2 tsp
- Baking Powder - 1/4 tsp
- Walnuts - 1/4 cup, chopped
Creaming your butter
In a large bowl, add your butter and brown sugar.
Slowly start beating the ingredients together, scraping the butter and sugar against the sides of the bowl. The butter will begin to cream with the sugar after a minute or so.
Once creamed, add your egg and banana and begin to mash.
Once combined, add your flour, baking soda, baking powder and cinnamon. Mix in the ingredients.
Stir until just combined.
Air Fryer Time
Preheat your air fryer to 150°C / 300°F for 3 minutes.
Give you banana bread tin a spray with oil.
Gently pour your batter into the tin.
Now top with your crushed walnuts.
Place into your air fryer basket and fry at 150°C / 300°F for 35 minutes.
Bake until a toothpick inserted into the center comes out clean. Or if you have a thermometer it should reach about 94°C - 96°C (202°F - 206°F)
Let the banana bread cool down in the tin for a minute.
Then you can use a spatula to pry the edges.
Flip it upside down and it should pop out.
Let it sit on a wire rack for 15 minutes for it to cool down. Perfect time to whip up some quick butter icing!
How to make a quick Butter Icing
In a bowl combine equal parts butter (room temperature) and icing sugar. I used about 2 tbsp.
Slowly start mixing the butter and icing sugar together. It may take a couple of minutes before it starts to cream. Slowly scraping the butter and icing sugar against the bowl. It should start looking like this.
Once creamed and smooth it will be very malleable and spread with ease. Ready for our banana bread slices!
Plating the Banana Bread
And there she is. Beautiful. Firm, crispy edges. Soft, fluffy inside. Tasty toasted walnuts.
Cut off a few slices with a serrated knife.
Spread some of that butter icing and enjoy!
Phil, thoughts?
I make this at least twice a month. It always performs well. I like to use a large bowl on a set of scales. Then measure everything as I add them.
The batch is a small size so it fits perfectly into my shallow baking tin. Any more and it usually bumps the top of my air fryer as it rises.
I have tried substituting the icing sugar with a sugar-free monk fruit sweetener icing sugar in the past. It creamed really well with the butter. Had a strange after taste, but it did satisfy my sugar rush feeling that I was craving.
But yes! Banana bread is a staple recipe for my air fryer. Try adjusting the recipe to fit your air fryer and baking tin!
