Air Fryer Potato Wedges with Avocado Dip
Home made air fryer potato wedges. Slice them into wedges, toss them in oil and season. Air fry until golden brown.
Drive a wedge between you and your hunger with these air fried potato wedges. Crispy, pillowy, salty bites of goodness.
Which potatoes should I use for wedges?
In Australia, the brushed potato (aka, russet potatoes in North America) works the best for roasting or frying. That's because of their starch and low moisture content.
BUT. For this recipe, I'm trying out those "25% less carbs" potatoes from Woolies. Mostly because I have them in the pantry and want to use them up. Plus trying to cut down on carbs.
They might not turn out as crispy but we'll find out how they perform.
Ingredients
Keeping it simple with just a few ingredients I already have on hand.
- Potatoes - I'm using 'spud lite carb' potatoes
- Salt - I got a salt seasoning of rosemary and garlic
- Fresh parsley - chopped
- Light oil - grape seed oil or any other light oil
Slice your potatoes into wedges
Give your potatoes a wash to remove any dirt from them.
Slice your potato in half lengthwise.
Then slice those pieces into half lengthwise.
Then slice THOSE pieces into half lengthwise! You should now have 8 wedge slices.
Cut the rest of the potatoes and place them all into a bowl.
Seasoning your wedges
Chop up some fresh parsley so we can season the potatoes with.
Doesn't have to be a fine chop, but something like this.
Grab some light oil. I'm using grapeseed oil but it can be anything with a high smoking temperature.
Pour some oil over your wedges. About 1 tbsp.
Then sprinkle on your salt seasoning.
Add half of the fresh herbs now. We'll keep the rest for the end. Give the bowl a couple of tosses to evenly coat the wedges.
Air frying potato wedges
I'm pre-heating my air fryer for 3 minutes at 200°C / 400°F. There's nothing in the basket, it's just getting hot.
Now that it's heated up, drop your wedges into the basket. Spread them out evenly so there's enough space around for air frying.
Air fry at 200°C / 400°F for 8 minutes.
Toss the basket a few times to flip the wedges. You're trying to get most of them flipped over. But don't worry if not all flip.
Return the basket and air fry for another 8 minutes. They should be golden brown. You may need to cook them a little longer / shorter depending on the size of your air fryer and how full your basket is. But try to aim for a golden brown color.
Plating your wedges
Top your wedges with the rest of the chopped herbs, and little more of that salt. I'm serving mine with an Avocado Dip (really, really, simple to make) that I made earlier.

Yeah, I mean, they are wedges. That rosemary seasoning I used tastes great. Love that flavor. And I liked having some sort of sauce to dip the wedges with.
The only thing is that they don't have that "crunch" that you'd get from being deep fried. They are a little 'flimsy', especially after they've cooled down a bit.
Couple of things. It's most likely from the type of potato I'm using. These 'spud lite' low carb potatoes have a high moisture content and low starch.
But considering I'm using these 'light carb' potatoes over russets, they're not bad! I'd air fry them for a couple more minutes when using these type of potatoes.

Ingredients
- 4 potatoes (spud lite carbs)
- 1 tsp salt (rosemary garlic sea salt)
- 1 tsp chopped parsley
- 1 tbsp light oil
Instructions
- 1Slice your potato into 8 long wedges. Cut them in half lengthwise. Then again lengthwise. And one more time. You should have 8 wedges.
- 2In a large bowl, add the wedges with oil, salt, and chopped parsley. Toss them until evenly coated.
- 3Preheat air fryer to 200°C / 400°F.
- 4Place a layer of wedges into your air fryer basket, and cook at 200°C / 400°F for 8 min.
- 5Give the basket a toss.
- 6Air fry for another 8 min until golden brown.
